This soft cheese with a mixed rind, washed and strapped with wood, has a predominantly vegetal, nuanced flavour of medium intensity. The wood strap that hugs the cheese wheel throughout the ripening process adds a lightly woody touch to its flowing centre. Winner of a CASEUS award in 2024, in the Washed, Mixed or Natural Rind Soft Cheese category, and bronze medallist at the World Cheese Awards in 2023.
