Buckwheat (Fagopyrum esculentum) is not a grass and is gluten-free. Therefore, its pure flour is not bread-making. It must therefore be mixed with wheat or rye flour. In this case, it's mixed with spelled flour. That’s why it’s low in FODMAPs. Buckwheat has a rich nutty flavor. It is however consumed more often for its dietary properties. Its proteins contain all the essential amino acids. It is a highly nutritious grain, moreover rich in soluble fiber, antioxidant compounds and minerals (especially copper, magnesium, and manganese).
